Formaticum has turned its cut-to-size Cheese Paper — a two-ply material that works like Gore-Tex, replicating the conditions of a cheese cave by wicking away excess moisture while allowing oxygen to pass through — into foldable Cheese Bags ($7 to $12 for a package of 15). “There’s no origami to get your cheese wrapped well,” says Mark Goldman, the company’s president. The bags hold about 1 pound and can be reused for similar types of cheese (consecutive purchases of Parmigiano, say, though not a comte after a Roquefort), and you’ll find you can preserve a brie or camembert for twice as long as wax paper or plastic. Available at Sur La Table stores, and some Whole Foods Market locations, or go to www.formaticum.com.
